Aji Japanese Bistro is Open in El Dorado Hills

The El Dorado Hills Town Center has another eatery: Aji Japanese Bistro.

The Japanese restaurant opened its doors Monday for a soft opening. Its head chef is Russell Okubo, who previously worked at the Sacramento-area Fat’s Family of Restaurants.

Aji Japanese Bistro’s Facebook page says the restaurant will change its menu often, and will focus on fresh fish and local produce.

“Aji Bistro offers a fresh look at Japanese food, both contemporary and traditional,” the restaurant said. “The cuisine of Aji directly mirrors the cuisine of Japan as a whole; featuring food that is both classic Japanese along with cuisine that is influenced from the west.”

The eatery’s general manager and co-owner is Nick Dedier, who previously worked at restaurants in Yountville and Las Vegas, according to the Sacramento Bee. Dedier and Okubo worked together at Sumo Sushi in Elk Grove, the Bee reported.

Aji Japanese Bistro’s sushi menu will be simpler than most in the region, Dedier told the Sacramento Bee.

“There will be no sauces on top of the roll,” the Bee quoted Dedier as saying. “We’re not going to drown everything in garlic-miso, Sriracha and mayo.”

Aji Japanese Bistro is located at 4361 Town Center Blvd., and will be open from 11:30 a.m. to 10 p.m. to start, the Sacramento Business Journal reported.
